- You need 6 of wild boar ribs.
- You need 1/4 cup of of pine honey.
- It’s 1/2 of ltr home brew cider.
- Prepare 1/4 cup of brown sugar.
- It’s 6 medium of sized carrots.
- You need 1 small of beetroot.
- Prepare 1 large of quince.

- This is for ex pats living in Turkey. First catch your wild boar. (Turks hunt but rarely eatt so you can acquire around 20 KGS of prime cuts for about £30. The ribs are about 14 inches long).
- Marinate the ribs in the cider,honey and brown sugar overnight.
- Transfer the ribs and marinade to a large baking tin.
- Scrape the carrots and add whole to the marinade.
- Clean and slice beetroot and Quince and add to marinade.
- Season,cover and cook on low heat for 3 hours.
